This is a Theresa Barbie Birthday cake.I made 2 chocolate sponges and bought a small sandwich cake. I used jam to stick them together. I also trimmed the cakes to make them ‘dress-shaped’ and then smothered them in butter icing.
I made a hole at the top of the cake to put Theresa in. Found out that her legs were too long so had to take them off. (They went back on easily so no harm done!)
I also bought some white fondant icing that was already rolled out and laid it over the cake. The icing was a bit short at the front so I infilled with pink butter icing. I stuck Theresa in on top and then decorated the dress with cake decorations (stuck them on with butter icing).
Also decorated Theresa with pink butter icing too.
