My niece loves princesses, so for her fifth birthday (September 17), I made her a special Barbie cake. It’s a surprise. She thinks she’s just going to dress up in her “princess” costume and come over to Aunt Keesa’s house to play tomorrow. When she sees the cake, I’m hoping to hear her famous words “She’s bee-u-te-ful!” I also have a tiara and a wand for Chyanna when she arrives.
I baked a white cake and made my own frosting using shortening, butter, powdered sugar, a little salt, vanilla, and milk. I don’t have a specific recipe, but go by the old style of “so much of this and so much of that,” which is how my mother always made her cake frosting.
Years ago, I took a cake decorating course and learned how to use bags and special decorating tips. However, I have always been more comfortable with the metal frosting tubes that my mother used, so that is what I did for this cake.

You wont believe this but my mom surprised me with a cake like this when I was a little girl and I will never forget it! I thought it was the most beautiful and special cake that I had ever seen and just to think, it was for me. That made me even feel more special. Keesa, I was so shocked to see the cake that you made! My mom ordered me one of those cakes when I was a little girl and I thought I was the most important thing on the planet earth. I felt so special. It was so beautiful and I will NEVER forget it. I can?t believe that you made that. It was so beautiful and brought such precious memories back to me. Thank you for sharing.
