I used 2 cake mixes for this Barbie Island Princess Cake. One mix went into the Wilton Wonder Mold. The other into 2 eight inch round cake pans. Other cake photo instructions said to use nine inch round pans, but by the time I leveled the cake from the wonder mold after baking I discovered that the 8″ pans were a better fit (my mix didn’t raise completely to the top). I also made a horizontal cut across the middle of the wonder mold (to create a layer to add more buttercream frosting that everyone loves).
Before inserting the Barbie Island Princess, I wrapped her, from the waist down, snuggly with cling wrap to protect her dress from the cake and frosting. I used buttercream icing for the entire cake, and purchased sparkle frosting in a tube for the design on the skirt. I attached a Happy Birthday message to the doll’s hands with a couple of zots. The finished cake, although not professional, was a huge hit and my 6 year old granddaughter absolutely loved it.
