I made this Brobee from Yo Gabba Gabba 2nd birthday cake for a child who absolutely LOVES Yo Gabba Gabba. Brobee is his favorite character so I decided to focus on that (after changing my mind about a million times before).
The cake is a simple square two layer marble cake. It is filled with whipped cream and frosted with marshmallow buttercream, made from Marshmallow Fluff and powdered sugar. I created the image and the sides of the cake using Wilton Sugar Sheets. I cut the shape of Brobee from a light green sugar sheet and used the leftover piece to cover the front of the cake. I covered the other 3 sides with a dark green sugar sheet.
I used green decorating gel and green frosting for his “fur” stripes, his mouth is made from a fruit roll up, his eyes are white whipped cream and black buttercream and his unibrow is also black buttercream. The sugar sheets are pretty easy to work with, you just need to make sure you plan, plan, plan before you start so you don’t waste any because they are a bit pricey.
The cake was a HUGE hit. The birthday boy loved it, as well as all of the guests. The marshmallow icing is a good choice because it holds up well, the sugar sheets don’t buckle as the cake sits like they tend to do when placed on whipped cream or regular buttercream. The frosting does get very hard when refrigerated but cuts very easily when it sits at room temperature for a little while.
