Coolest Castle Birthday Cake

This castle birthday cake was made by me for my daughter’s 18th birthday! It was made from plain sponge cake, a large square with odd bits stuck around it in layers to give a landscape effect when covered in green fondant icing. I used watered down green colouring and edible green cake dusting powder to add texture to the green icing.

The trees, flowers, and pond were modelled with coloured fondant too, and the bridge made from fondant covered marzipan,(with little pink sugar flakes rolled into the icing for the “path”). A bit fiddly making them, but fun. The castle was a small square sponge, with a smaller on top, covered again in white fondant, sprayed with edible pink lustre spray (makes it really glittery!) and again, the doors/windows were made from fondant, the details “painted” with watered down coloured icing.

The towers were chocolate mini rolls, covered in icing and sprayed with same spray as castle, and topped with the turrets made from ice cream cone wafers coated with white fondant and sprinkled with edible pink glitter flakes. (Wooden skewers hold the towers and turrets in place). Took a wee while, but she loved it! 0nce a Disney princess, always a Disney princess!
