My daughter saw this castle birthday cake in one of my cake books and decided that this was the one she wanted. It was easy to make the sponge but the turrets are tricky using glycerin icing. They have to be made a good 24 hours in advance.
Once you have the basic cake it’s up to yourself how you decorate. You can be as flamboyant with the icing of the ivy as you want but you need a little patience, you do get there in the end.
Needless to say that since making it for my daughter, Caitie, most of her friends have had one too!
