Coolest Castle Birthday Cake

My daughter was having a Barbie and the Diamond Castle birthday and wanted a castle birthday cake. I looked at the cakes on this site and got some great ideas!

I used a 10″ square and 6″ round cake (each was 2 layers) for the castle. I supported the top round cake by putting doweI rods in the bottom cake. I also put one dowel through all the cakes to hold it all together. I iced these using the Wilton buttercream recipe (with a few tweaks).

The towers were made from paper towels rolls. I cut them in half and covered them with a thin layer of fondant. The tops were sugar cones that I iced with royal icing and rolled in clear sprinkles. I used the extra royal icing to make drop flowers that I added to the cake when they were dry.

I did the fondant and royal icing 2 days ahead so they would have time to dry. I attached them to the cake and the cake board with royal icing and they stayed up …even in the car. I bought some stick on jewels and put around the top layer. The tiara and mirror were left over from a playset we had around the house.

The cake was a big hit! The only thing I recommend is putting the cake on an actual board instead of a cake board. It is very heavy and this helped to hold it up in transit to the party.
