For this homemade castle birthday cake I baked a square two layer chocolate cake in 8 inch tins. These were sandwiched together with butter cream. The four towers were made from 2 large Swiss roll cakes cut in half so that one Swiss roll made 2 towers.
The cake was iced in fondant icing. It was a very pale blue made by using a large pack of white icing with a small pack of baby blue mixed with it. Then I sponged on gray paste food colouring with a kitchen sponge cut to size. I used wooden skewers to hold the towers to the cake. The battlements were added with fondant icing on top and held in place with butter cream and cocktail sticks.
Additional icing decoration was painted or piped on. The cake sat on a piece of blue cellophane on the cake board which made a great moat and all the rough edges were covered with piped butter cream icing in the appropriate colour. I made paper flags for each tower, as my son was four and there were four towers it worked well, and used a toy dragon and candles to complete the castle.
