Coolest Castle Birthday Cake

I made this Castle Birthday Cake for my daughter’s 4th birthday. She wanted a Princess Castle cake so we went with pink (!). The idea came from a book called No Time Party Cakes. It’s quite simple really.

The bottom cake was a 12″ vanilla sponge and the top was an 8″ chocolate sponge (because my daughter doesn’t like jam (jelly). The towers are made from gelatine icing which makes them really hard but light so you can stick them to the side of the cake easily. I can’t remember the recipe and I’ve lent the book to a friend but you add liquid glucose and gelatine to icing (confectioners) sugar. Flower paste or pastilage would work just as well I think.

I rolled it round kitchen roll inner tubes and let it dry over night. The turrets were ice cream cones covered in edible glitter. The ramparts are mini pink marshmallows but you could just use blocks of icing cut evenly. The rest is just piped green icing and tiny flowers. The door was chocolate sugarpaste with a gold painted handle.
