This was an impressive castle cake to make. I hired the Wilton Romantic Castle Cake kit (which included the turrets, windows,doors, peaked roof, flower cutters).
I made 400 little flowers using the cutters and let them dry. Then I iced the turret tops, window edges and roof with royal icing and rolled them (and sprinkled in colored sugar which I made myself by adding a little food coloring to sugar leaving them all to dry/harden. This was all done a day ahead of assembling cake.
The cakes I made were a 14″ and 8″. The 14″ was a 3 layered Neapolitan cake as requested by my daughter and the top plain vanilla. I crumb coated them and stacked them. Then iced them in white butter cream icing.
I stuck the turrets to tray with royal icing and assembled the cake, stuck on the flowers and piped on little leaves around the flowers. Placed the Disney princess dolls around the cake board (after raiding them from the toybox).
Took about 3 hours to ice and decorate at time of assembling and a couple of hours doing the turrets and making flowers the day before. Well worth the effort to see the look on my daughter’s face.
