I made this Castle Cake for my little girls 4th Birthday. It is a basic sponge cake with thick white chocolate ganache coating the whole cake.
I used cream filled biscuits for the large towers, Pollywaffle chocolate bars for the smaller towers and 3 different sized ice cream cones for the tower tops.
It also has sugar paste windows and trims.
It was made with 4 large square cakes and 1 small round cake on top. Each layer was filled with jam and whipped cream. I coated the ice cream cones in white chocolate ganache then rolled them in the Fairy dust sprinkles.
To make the towers I stacked the cream biscuits and added ganache between each one, once the ganache sets it basically glues everything together. I decided to use White chocolate ganache because it held everything together, easy to colour and of course it tastes great!
This cake was huge… I was worried that we would be eating cake for weeks, but I gave everyone a large chunk of cake to take home so in the end we only had a small amount left.
The kids thought it was great…
