This chocolate espresso cake was made for a special young lady who just graduated. She loved her first visit to Scotland so we decided a castle cake was in order.
The castle was made by shaping stryofoam pieces underneath. The were then covered with multicolored fondant (black, brown and white) in give it a stone look. The fondant was rolled on an imprint matt to achieve the stone look. I cut out the pieces and ‘glued’ then on using royal icing.
The turrets and made from icecream cones wrapped in fondant and the stone walls were free hand cut and attached in the same fashion. I added flowers and vines to the sides of the castle and created shrubs and trees to decorate the grounds. The next two layers were chocolate cake with espresso marscapone frosting inside. I assembled the cake and used dowling and cake separators for support. Stairs were added which were made from rice Krispies and fondant. The water surrounding the castle was colored marscapone frosting and shaved white chocolate was added around the base for decoration. It weighed almost 45Ibs when completed!
