I made this Candy Castle Cake for when my 2 youngest boys turned 2 and 4. I bought candy land plates and balloons to go with the cake.
The bottom layer is a 12 inch petal cake pan and the top was made with a big cupcake pan. The ice cream cones are made out of fondant and were made a few days in advance. The “ice cream” on the cones is royal icing. I frosted the cake with buttercream frosting that I made. I then decorated the cake with a variety of store bought candy, gum drops, peppermints, and mini M&M’s. I used royal icing to attach the candy to the cake. I used a castle kit that I purchased for the doors and windows. I then placed the ice cream towers around the cake using royal icing on the bottom of them.
I suggest making as much in advance as you can. I made all the cakes a week in advance and froze them. I made the frostings a day ahead of time. I made the fondant ice cream cones 4 days ahead of time. I then assembled the cake and decorated the day before the party. It was a huge hit with the parents and kids!
