I made this Castle Cake with three different types of mud cake. The bottom layer was a 10” round chocolate mud cake. The middle layer was a 6” round white chocolate mud cake and the top layer was a 3” round caramel mud cake. I also sculpted the turrets from “cake pop” mix (cake that is mushed together with buttercream icing) and then covered them in fondant. The very top turret was done like this too.
I used buttercream underneath the fondant. The fondant was a little (lot) more pink than I wanted but overall it worked well. I wasn’t sure how to get the side edge to work so I just cut a circle from the fondant using the bottom of the cake pan to put on the top of the cake and then cut a strip from the fondant to go around the edge of the cake. The strips around the edges have joins in them that were *supposed* to be covered by the turrets.
I would also make the bottom layer a bit thicker next time.
