I made this Cat Cake for my daughter’s first birthday. It was easy to make and was interesting for her because she used to love looking at all the cats that would hang around outside our house.
As it is evident, I baked 3 round cakes – one each for the face and body and a third to cut up the ears and tail from. The cakes themselves are sponge cakes with carob (that’s like cocoa but caffeine-free) frosting. The cake recipe is from “The Book of Egg free Cakes” by Cintia Stammers. It’s an amazing book for vegetarians who love to bake.
The base icing is whipping cream with sugar and carob and the darker one is carob butter icing (since it is firmer than the cream icing and easier to pipe).
