Our little princess loves Cinderella, so I decided to make a Cinderella Princess Castle Cake for her 3rd birthday. I was inspired by several cakes on this site, and combined my favorite features into this design.
The cake itself was very simple to make. Just a square cake using a 9-inch pan, and frosted with buttercream icing. I hoarded my paper towel rolls for a few weeks, and frosted those with white icing to match the cake. I found it difficult to get the icing smooth on such a curved surface, so I rolled them in sugar for a sparkly finish.
For the turrets, I frosted sugar ice cream cones, rolled them in blue sugar (purchased from a craft store) and inverted them on top of the paper towel rolls “gluing” lightly with buttercream. I lined the castle walls with sugar cubes found at the grocery store. I piped on a few windows and flowers, and “Happy Birthday”. I also made a small flag with the number “3” and attached with a toothpick to the highest turret, but it didn’t make it into the photo!
Of course, Cinderella, the prince, and a glass slipper found at a party store were the perfect finishing touches. My princess was delighted!
