I went all out for my daughter’s second birthday – bought the platform, the box everything I could to make this Homemade Clifford the Big Red Dog Cake professional looking.
The base is a chocolate sheet cake (I’m sorry, but I cannot recall the size!) Clifford is a white cake using the Wilton Puppy mold.
I made a large batch of pure white buttercream frosting and divided for the grass, eyes and fur. I made a normal batch of chocolate buttercream for the fence, outline and pupils. I made the frosting a little TOO stiff which made it difficult to pipe and a bit dry (lesson learned for the next one). Note, be sure to get the NO TASTE food red food color or the entire cake will be inedible. I did some research and found Super Flame Red was the no-taste version of the Cake Craft colors – they are also certified Kosher, Gluten free, and Nut free. I think I used way too much (1.5 oz) because I forgot it does continue to darken so it was a little too bright in the end.
I had traced the outline of Clifford first and then filled in the red. I did need to re-trace the outline on top of the Red for a final touch. The fence was done using a petal tip; the grass with a large star; the fur with a smaller star; the outline with a round tip. The sizes were a whatever standard comes in the starter kit.
Aside from the frosting being dry and flaky, the cake was perfect and my daughter and her friends loved it. I was almost disappointed I had to cut it up!!
