The Colts Football Helmet Cake was for my son’s 11th Birthday. This is a white cake with almond extract and buttercream icing. I used an 8″ spring form pan and I used the large stainless steel bowl from my Sunbeam standing mixer.
Now on the bottom of the bowl there is a plastic surface that is screwed in that must 1st be removed. Also, because I used such a deep bowl I baked on a lower degree than what I generally bake a cake on so that the cake would not over cook on the outside.
Once my cakes were cooled I used a cake leveler to level off the top of the cake that I made from my bowl. I divided the cake in three levels, brushed each level with sugar syrup and frosted each level with frosting. I then took my other cake, placed it on top of the other, divided and frosted. I used 4 dowels to keep the cake stable.
I carved my cake, and covered it in fondant icing. I colored and cut out fondant decorations. Bonded them to make cake with water. Paint the cake with a pearl luster dust. The face mask was made of fondant with flower wire inserted. This was formed, shaped, dried out and then bond to the cake. I received a lot of call regarding this cake.
Helpful Hint: Though I leveled my dowels, once the cake had really settled I realized they should have been a little shorter so cut your dowels a little shorter leaving room for the cake to settle.
