These Dinosaur cupcakes are really simple and fast to make. Bake cupcakes and let them completely cool.
Make a ganache (1/2 cup heavy cream, 3 oz. bittersweet chocolate in small pieces – heat the cream, pour over the chocolate bits, and stir until smooth and all the chocolate is melted).
While the ganache is still warm, dip the tops of the cupcakes to cover the top. Let the ganache cool and set – the tops should be smooth and shiny.
Make a buttercream and tint it green. If you want to go the extra mile, make 2 or 3 different shades of green. It adds depth to the grass and looks really cool.
Once the ganache is cool, pipe on the grass.
I used Wilton tip #233 to make the grass. You have to work fast though because once the buttercream in the bag gets warm from your hands, it comes out as a clump rather than separate strands of grass.
Take your mini dinosaurs and place one on the top. I wanted to use either candy rocks or robin egg candies to decorate, but I couldn’t find either on a days notice. Instead I settled for M&M’s, but the kids didn’t seem to mind!
