This castle cake was one of the first birthday cakes I made for my daughter, and it was a lot of trial and error. It turned out pretty nice, not perfect, but she loved it! I used a yellow cake mix for the cake and different sized square pans. The icing was Swiss meringue buttercream – one lesson learned was that I didn’t apply it thick enough.
For decorations, we decided to try fondant. Lots of fun rolling and cutting and my daughter helped make all the decorations. Nothing fancy there. The turrets took forever. I used ice cream cones, covered with frosting, then coated in edible glitter. The cones were very fragile and kept breaking.
While the icing/glitter was firming, I made the little signs for the top of each turret. I glued the signs to a toothpick, and taped the toothpick inside the hole at the bottom of the cone. I ordered the princesses from a cake decorating store and stuck them around the cake.
