This Dolly Birthday Cake is very popular with younger girls.
I bake 3 cakes in 8″ round tins and one in a pudding dish to make the curved top of the dress. Piled them up and gave a thin coat of either jam or buttercream to stick the dress to. I used a sheet of Dr. Oetker ready rolled Royal icing and simply drape it over the top of the cake, arranging the folds to look like a ballgown.
I then hollowed out the middle of the cake right through to the bottom of the cake board. The dolly is wrapped in clingfilm to protect both doll and cake and insert the doll into the hole.
The dress can be decorated however you wish. This particular cake is dusted with pink crystal sugar which is stuck with water along the hem of the dress.
The extra benefit of this cake is that the child gets an extra present!
