I made this Dora the Explorer Birthday Cake for my daughter Ava’s 2nd birthday. Dora the Explorer is her favorite character and I wanted to do something special for her that she would remember.
This was a 2 tier chocolate cake with homemade cannoli filling. I used nine and 6 inch pans. I did the whole cake in fondant. I prepared the cake and filling the evening before in order to ensure the filling was set and the cakes completely cool. This also made leveling the cakes much easier.
Though this was my first attempt at fondant, I was very happy with the results, although I do suggest you enlist the help of some family members. The fondant can be tough to soften and is time consuming especially if you make several colors as I did. I used all Wilton products including pans,cake leveler, colorings, cookie cutters, piping bags, decorator icing, fondant smoother and mat as well as cake board and foil covering. I also purchased the cake topper.
I loved this cake but most important so did my little explorer.
