I made this homemade easy Barbie cake by stacking (3) 8″ cakes and then topping it with a layer that I baked in a small stoneware bowl I have at home that is 8″ in diameter… worked perfectly!
I mixed up (2) white cake mixes following the instructions and equally divided the batter between the 4 pans/bowl… baked according to box, but the bowl took about another 10 minutes. I would recommend trimming off the edges, as they got a little brown and were chewy/harder to cut through when we cut the cake.
I cut holes in the middle of each layer before stacking so the barbie would fit in without hurting the cakes…again, worked perfectly! I just got a Barbie from Walmart and wrapped her from the waist down in plastic wrap. Her torso was “dressed” in plastic, so that was perfect.
As far as the icing, I just used Ricks Special Buttercream which I found on Allrecipes. I followed some of the suggestions and used half butter and half Crisco, only 7 c. powdered sugar… but I also added just a few drops of butter flavored extract, and in my opinion, that was the kicker…it was GOOD!!! Like bakery frosting! The full recipe was the perfect amount for this cake… but I did very little piping, so adjust accordingly.
I used the paper trick for smoothing out the skirt before I piped on the finishing details… and refrigerated it in between steps.
I was thrilled with the results, it was way easier than I thought it would be. It was for my niece’s 2nd birthday, and I have to say I think it’s better for older girls. She didn’t seem to know what to make of it! But, it was fun…and worth it! I can’t wait to try more!
