I started this Elephant Birthday Cake by using a 10 inch, rather deep (3 inches?) square cake tin and made a cardboard cut out of my elephant that fit within the pan. Then I lined my tin with baking paper and doubled my banana cake recipe. I baked the cake at approx 160-170 degrees, so 10-20 degrees less than the recipe suggested and it took around an hour.
Once the cake was baked (nothing sticking to a skewer when poked in) I removed from oven and let it cool in the pan for around 20 minutes before removing it onto a wire rack and slipping the baking paper out from underneath. I then let the cake cool for a couple of hours until it was luke warm, placed my cardboard cut out on top of the cake and used a sharp but NOT serrated knife to cut the outline of the elephant. I then let the cake cool completely.
Using a jar of Betty Crockers vanilla frosting I sealed the edges of the cake with a thin layer, then put the rest in a bowl and stirred in about 10-15 drops of blue food coloring (one or two drops at a time) until the color was ok. I spread it over the whole cake with a knife, then used a chocolate fudge icing pen to do the outlines and a white chocolate one for the toenails.
