Cool Homemade 2 Tiered Elmo Birthday Cake for my Granddaughter

I dared to make an Elmo Birthday Cake for my grand-daughter’s 2nd birthday. I was trying to match the green color from the Sesame Street sign, but it turned out a big mess, because I have no idea how to mix colors, so the first batch of frosting ended up in the garbage. I then mixed another batch and decided to leave it as is. Talking about stress, but I was surprised with the outcome.

For the bottom cake, I used 2 packages of Duncan Hines Swiss Chocolate cake mix. The filling was made out of 1 tub prepared cheese cake mix, 1 tub cool whip, and some icing. Even though I had never tried this combination before, it tasted great. I used the same cake mix and filling for the round smash cake.

Elmo was constructed out of rice krispies and was held together with lollipop sticks. I covered Elmo with red candy melts, just in case the icing missed a spot and then placed red icing all over Elmo. While placing the red icing on Elmo, my pastry bag busted, talking about a mess. I had to use about 4 little tubs of Wilton food color for this. Elmo’s mouth, nose, eyes and feet were made out of fondant.

The cake was a hit at the party and kids told my older grand-daughter that I was the coolest grandma, because I always make them special cakes. That made it all worth it and I have red food colored hands to proof my labor of love.
