I made this homemade fondant Hello Kitty 6th birthday cake for my daughter’s 6th birthday. The theme is Hello Kitty. It is a 2 layer cake made of a traditional plain vanilla birthday cake recipe that works great with fondant and is easy to cut into a shape. The filling is a basic butter cream/shortening recipe. The butter cream was also used to crumb coat the cake prior to laying the fondant.
The face, eyes, nose, and bow are all made from marshmallow fondant (which tastes great, not like pre-made store bought fondant). The face is simply the fondant without any food dye. The fondant was made the day before and allowed to sit in the fridge over night. I added some meringue powder to the fondant for the eyes, nose, and bow so they would be a little firmer. Those pieces were all hand shaped the day before.
The white fondant is rolled out to about ¼ inch. I trimmed the extra using a pizza cutter. Using the edge of my hands, I put a little pressure around the ears and top of the head to get an accurate head shape. After fondanting the cake, I made yellow royal icing and piped the small star flowers around the base of the cake to give it a nice finish. I used the remaining royal icing to make more star flowers around the homemade fondant Hello Kitty 6th birthday cake.
The candles are also set in royal icing. There are 6 candles and an extra for luck. The cake measures about 10.5 inches wide, 9.5 inches long, and 5 inches tall. It will feed about 10-15 people depending on how large the pieces are cut.
