I made this Hello Kitty cake for one of my birthdays because I loved Hello Kitty. It is a simple chocolate cake baked in a round pan. To decorate the cake I used pink butter icing for the main part, and to make Hello Kitty white I used copha instead of butter in butter icing, because there would be a yellow tinge if I used butter.
Hello Kitty is decorated with jellybeans for her features and flower, and licorice for whiskers. I found heart shaped gummy lollies from a Chinese grocer which I stuck on around the cake.
To ice the cake I drew in the outline of Hello Kitty’s face with a knife and first iced the pink part, filling in Kitty’s face afterward.
To review the copha icing, I would say it is a great white colour, but it tasted pretty much like sugar, so I would recommend it to be used only on part of a cake like this one, not on the whole cake. Also, if you don’t have copha it would work just as well to use eggwhite icing.
