There is a family tradition around this cake, my grandmother used to make it for my mum when she was a little girl. My mum made it for me and my brother makes it for his daughter. Growing up in Australia we used to call this a Dolly Varden cake, but now days it’s more popularly known as a Barbie Birthday Cake.
My daughter just turned one and I decided to continue the tradition. However, she is dairy intolerant so I had to come up with a cake recipe that would work and that was dairy free.
After experimenting a couple of times I came up with a dairy free chocolate cake to fit the tin: 350g self raising flour, 300g caster sugar, 50g cocoa, 350g dairy-free margarine, 6 eggs, 2tsp vanilla extract: mix all together until smooth and pour into tin which has been buttered and floured – bake in 180 degree (celcius) oven for approximately 80 minutes or until cooked.
For vanilla cake replace the 50g of cocoa with self raising flour. I iced it in white and mauve icing in keeping with the theme of her party which was butterflies. I made the wings out of net and felt.
