I made this Carousel cake for my daughter’s sixth birthday. At first, she wanted a My Little Pony cake, but then she came up with the idea of putting ponies on a carousel.
Not exactly sure what I was going to do, I started with a deep 16″ diameter round cake pan and filled it with two and a half cake mixes. I then baked a deep 8″ cake with two cake mixes so it would rise as high as the bottom one. My daughter wanted blue, purple, pink and yellow as the colors, so I took a toothpick and etched out sections on the cake before I iced it. I then started piping the colors, alternately, onto the cake and then piped a decorative border around the edge of both cakes.
She had picked out some of the smaller ponies in her collection and I placed them on the cake in each color section. I then took a large pretzel stick, iced it a bit, and wrapped some ribbon around it. Next, I took a different color ribbon; I tied pieces of this ribbon around the ponies’ necks and glued the other ends to the pretzel stick, using icing. I then picked out a decorative button and icing-glued it to the top of the pretzel stick.
She loved the cake and said it was exactly what she wanted!
