Coolest Homemade Castle Birthday Cake

I promised my niece that I’d bake her eighth birthday cake. I showed her several pictures from Wilton’s website and she made her choice: a Castle cake.

Instead of buying the Wilton princess castle cake kit, I decided to make the turrets myself with foam, lots of glue and paper for the cones. The tower and turrets were painted with edible lavender spray. The top of the turrets were covered in butter cream and had purple sprinkles added. If you notice, I used cupcake liners to complete the towers.

The cakes were one 8″ chocolate with vanilla filling cake on top of one 10″ vanilla cake with chocolate pudding filling. The cakes were frosted with butter cream, and covered with white fondant. There were rods on the bottom cake to support the cake on top. The little flowers on the edges were done days in advance with fondant, using Wilton’s flower cutting kit. The windows and gate were all made of foam and piped with colored butter cream.

I printed the name off the computer and added four stars, made of purple butter cream, to each corner. The towers on the base were attached with butter cream; the rest have a rod attached to them and I simply stuck them to the cakes. You may notice, if you look very hard, that some are a bit crooked.

It took me almost a week to prepare and a whole day to bake and decorate the cakes. But, when my niece saw the finished product, it was all worth it.
