This Hot Air Balloon Cake was the result of a mistake! I had originally planned to make a train cake for my two year old, but when I pulled this cake out of the oven (a yellow cake), it had risen really high in the middle and was really short on the sides so I first panicked, and then I improvised!
I made the high part into a hot air balloon, and it turned out to be a beautiful cake! The frosting was a fluffy 7-minute frosting, and I spread the blue and the red on separately, but saved some white for last, putting it on top of the blue for big, thick, fluffy clouds. Spaghetti made the ropes, a cookie for the basket, and animal cookies for the rest.
As you can see, it proved irresistible to my 2 year old!
