My son is obsessed with Lightning McQueen and wanted a Lightning McQueen cake for his 4th birthday. I am definitely not an expert cake decorator so I was pretty nervous about attempting this but after looking through all the Lightning cakes on this website, I was determined to at least try it.
I used 3 13×9 cakes stacked one on top of each other. I baked them a week ahead of time (for times’ sake) and froze them. The morning of the party I took them out, stacked them with buttercream frosting between layers, and then carved the shape of the car. (It’s much easier to carve them when they are frozen – they don’t crumble)
The night before the party, a friend and I made Marshmallow fondant icing in all the colors I would need for the cake (this was actually the toughest part). I used a recipe online for this & Wilton’s gel colors to make sure the red was actually red. I re-rolled the red out the morning of the party & covered the cake.
Then added all the finishing touches. I had one of my son’s big Lightning cars sitting on the counter the whole time to make sure I got it right.
