I made this Homemade Luau Pig Cake for my son’s 8th birthday Luau Party. I used 2 boxes of cake mix. I poured the mix into 5 cupcake molds (feet and snout) and 2 glass baking bowls. One bowl was bigger than the other. These for the head and body. Before I started I set them up to make sure I liked the look. I had to keep a close eye because each piece had a different baking time.
After they were all done baking and had cooled enough, I removed them and arranged them on a cooling rack. After the cake had completely cooled, I moved the pieces to the platter. I mixed pink icing in a large can of store bought icing. I frosted the entire cake, using it as a glue to hold the pieces together also. I made my own marshmallow fondant, a few days beforehand, from a recipe I found online. I added pink color it, rolled it, and covered the entire cake with the fondant. I trimmed around the cake removing the extra fondant; I used this to make the ears and tail(that I shaped into an “8”). Instead of making eyes, I put sunglasses on it and used candy for the nostils. I added pinapple slices and cherries (made from extra fondant) and a lei to give it a Hawiian look.. and of course an apple.
