I made this Mermaid birthday cake for my friend’s daughter’s 7th birthday. She had a mermaid themed party and requested a mermaid cake. I used the Coolest Birthday Cakes site to get ideas.
I ended up using the Wilton Wonder Mold pan for the sand dune and a large oval cake for the base. The mermaid is a Mermaid Barbie. The sand dune was base coated in butter cream and then covered in graham cracker crumbs for the sand effect. The ocean was blue butter cream that I let dry just a little and then made waves with an offset spatula – just touching it to the surface and lifting on an angle to create each crest.
For the mermaid tail, I first outlined it in the purple butter cream, and then filled in each row using alternating colors with a shell tip. The border on the bottom of the sand dune and the oval were made with a standard shell border. All of the colors were determined by the bikini top that came on the Barbie. Lettering was done with the help of Wilton script stencils.
