Coolest Mermaid Birthday Cake Design

My daughter asked for a mermaid on a rock for her 7th birthday so I freewheeled from there for this Mermaid Birthday Cake Design. Firstly, I lined a baking tray with foil and created a kind of foil ‘basket’ that took up half the tray. I scattered in some jelly sea creatures and poured over a mix of blue and green jelly and popped in it the fridge to set. When it was half set I added in some tiny toy sea creatures to ‘float’ near the surface.

I made two vanilla sponges and cut the top off one and then cut up the second one roughly and put it on top on the first, sealing it to the bottom one with some icing. I then iced it roughly with chocolate icing.

I made the seaweed by microwaving jelly snakes for maximum 5 seconds each and then rolling them out between 2 sheet of non stick paper. I then cut them into round shapes and pulled them to make them irregular shapes. I put them in the fridge to set a little too and then draped them over the cake. I added some little starfish sweets and toys to the rock.

I blitzed some biscuits (cookies) in the food processor and poured it round the rock for sand and popped on two small mermaid dolls from my daughter’s collection. I’m pretty happy with the result!
