My daughter wanted a Mickey and Minnie Mouse birthday party for her 3rd birthday so I decided to make my first real attempt at a major baking project. I’m not a baker at all so this Mickey Mouse Minnie Mouse Birthday Cake is semi-homemade.
I used boxed cakes but made the fondant myself using a white chocolate marshmallow fondant recipe I found online. I didn’t want to spend a lot on the decorating tools until I knew I’d like doing this kind of cake so I used things I had in a drawer, star and round cookie cutters, a rolling pin, and a pizza cutter.
I wanted to make something impressive and able to feed a lot of people (50) so I created a 3 tiered marshmallow fondant covered cake. The top layer was created to look like Mouse Ears, made from chocolate cake and chocolate fondant. I used Wilton’s sports ball shaped pan and made ears out of gum paste. The middle layer was inspired by Mickey Mouse’s pants, red fondant (added Wilton Red Red and Christmas Red coloring and cocoa powder). The bottom layer was pink fondant over a 2 layer cake, french vanilla and chocolate with a chocolate mousse filling. I covered the cake with the dusty pink edible glitter and added gum paste polka dots, lace fringe, and pink bow.
Overall I was extremely pleased with the results. My only problem was that the mouse ears started to melt within about 10 minutes of being out of the refrigerator. I quickly put some curly ribbons and a tall candle behind the ears to prop them up to keep them in place while we sang. I realized later I made them out of fondant instead of gum paste which would have hardened better.
