For my goddaughter’s 7th birthday she was having a Minnie Mouse party and I was asked to make the Minnie Mouse Birthday Cake. I used tips from this site to put this one together. I made a double layer lemon cake with strawberry filling for the bottom and a chocolate with chocolate ganache filling for the top. The Minnie hat is also chocolate – no filling. I used crusting buttercream recipe and tried the “Viva paper towel method”. I think my icing was a little too soft, but it came out ok. I bought black fondant since I can’t ever seem to get black icing to work. I had white marshmallow fondant left over from my daughter’s cake.
I used circle and letter cut outs to decorate it. I also made “beads” to mask the mistakes on the bottom edge. For the hat I made 1/2 Wilton ball pan, covered it in buttercream then rolled fondant. I cut out the ears from the black fondant – have to be pretty thick – and let them dry. Then I put 2 skewers behind each one and covered the skewers with black fondant so they wouldn’t be too conspicuous. I inserted them into the assembled cake.
One tip – do NOT let the ears start to soften, they will crack once they are standing up. It’s better to keep the cake refrigerated till it’s time for the party.
