I got the idea for the mocktail cake from Foodnetwork magazine’s Tikki Cocktail cake. Since I was making it for a party with kid’s I just renamed it to a Mocktail.
Cake: I baked one 6 inch round cake for the center and two 1 quart bowl cakes for the top and bottom halves. I carved out the top cavity for the top most cake and frosted the cavity with vanilla frosting and the rest of the coconut with chocolate frosting and covered it up with toasted sweetened shredded coconut. The cavity is filled with vanilla frosting melted in microwave for 8 seconds to give it a liquidy look. The plumeria look alike flowers are made of fondant and I colored remaining shredded coconut green for the grass. Rest of the decorations are store bought to give it a more attractive look. I photographed the cakes from the first to the last stages to check if everything was proportionate and it was easier to discover a lot of glitches in photographs than the naked eye.
