This method of icing is called the petal effect. It is done by using a #12 tip; make a large dot, take your angled spatula, pressing in and pulling sideways. There are many tutorials out on the web for this method. It really is not hard, just a bit time consuming but fun. Just practice on a sheet of wax paper, making sure your rows are straight and uniform.
Using a crusting butter cream icing I colored dark pink. As I made and completed a couple of rows, I then added more white to the pink to lighten up the color. As you can see by the time I got to the top I used only the white icing. This is called method is called ombre. The cake is two 3” cakes stacked. It was homemade using fresh strawberries and tasted divine. The 80 some birthday gal was very impressed.
