I made this Pink Princess Castle Cake for a friend’s daughter’s 4th birthday.
The cake is a 10inch Madeira cake iced with regal ice which was then painted with pink and yellow colour. The big towers are regal ice molded round disposable cups for quickness but I have made the cake by cooking towers in old cans and then iced. The icing around the towers was white in which I mixed a bit of pink to give a mottled affect.
The gate is regal ice again which was left for 24 hours to dry and then decorated with gold balls. On top of the turrets I have sprinkled gold dust and round the edge of the cake is more royal icing coloured mottled pink for rocks. Or you could pipe around the edge.
This cake is wonderful. I have never heard of regal ice, is it like fondant?
