I made this Princess Birthday Cake for my daughter, Lily’s 3rd birthday party. She had been asking for a princess party since her 2nd birthday and had spotted the princess cake in the Annabel Carmel party book. It was the first time I had worked with sugar paste icing and at one stage I was a bit worried that the whole thing was about to become a disaster but the decorations seemed to save the day I think.
The trickiest bit was the folds in the skirt but I managed to cover up any bits the got slightly wrinkled with little glittery balls. The sticky icing paste made of egg white, icing sugar and lemon juice saved the day and sticks like glue. Fabulous stuff! All the guests were pretty impressed on the day and my little girls reaction of ‘Wow!’ and squealing with delight made all the hours of work all worth it!
