After making my first ever Barbie doll cake for a friend’s Hen Party, I was asked by one of the guests to make a princess cake for her daughter’s 3rd birthday.
Using the same method for the Madeira sponge as before (9″ cake tin and a Pyrex bowl), I this time sandwiched the two together using bright pink butter cream. I then made the skirt from rolled out pink royal icing, and decorated it with piped bright pink icing, a pink ribbon, and cut out little stars and hearts from the left over pink royal icing.
To finish it off I used Barbie sprinkles and also an edible glitter, which I mixed and applied with vodka (it evaporates so is not alcoholic when eaten, and you cannot taste it). I also used icing for the wording and made some little candle holders from the pink icing.
The glitter effect doesn’t come out so well on the photo, but the little girl loved it! She is very into pink and princesses, so this was a great cake for her.
I’m very pleased with my 2nd ever Barbie doll cake, and hope to make another so that I can keep practicing! Thanks to all who have contributed to this site – I wouldn’t have been able to do it without the helpful advice.
