Coolest Princess Castle Birthday Cake

My elder daughter asked for a Princess Belle birthday cake for her 3rd birthday. After scouting round on the internet, I came to this site and, taking into consideration my very novice level of baking and decorating, I decided to try and ‘bake and build’ a castle cake for her.

It was our first and biggest project ever; it took us three days from start to finish, working mainly when both girls were asleep, and we were really happy with the outcome. Not only did the look on our little girl’s face say it all, as well as her endless expressions of thanks for making such a beautiful princess cake, but also the gasps of awe and compliments from our guests made it all worth it!

The base of this cake was a rich and moist chocolate cake with chocolate ganache filling and frosting. The round cakes were a strawberry with cream cheese filling and frosting, and a chocolate with cream cheese frosting. The whole cake was decorated with homemade marshmallow fondant.

The castle turrets were made of ice-cream cones, both sugar and waffle, dipped in melted and coloured white chocolate and then covered with sprinkles. To stick the parts together, royal icing was used with silver balls added for deco. Princess stickers were glued onto bamboo skewers and stuck onto tinted white chocolate-dipped marshmallows.
