Coolest Princess Castle Cake

This princess castle cake was for a friend’s 21st birthday.

The cake was one large square cake, 1 other large cake (I used a round tin), and 1 loaf tin. The square cake was the base of the cake. I then cut eight round circles from the other large cake and sandwiched these together in twos and put in the four corners for the turrets. The loaf cake was cut onto 4 and the pieces put between the turrets to make the walls. All was stuck together and then covered in pink butter icing.

Decoration: Turrets were ice cream cones covered in fondant icing which I’d added some pink colour and sugar glitter to. The ramparts are pink and white marshmallows topped with silver balls. The windows, portcullus, drawbridge, name and numbers were all done with dark chocolate (melted, the “painted” onto baking paper, put in fridge to set, then peeled off and stuck to cake with small amount icing). Vines were done with green writing icing for stems, with angelica for leaves and sugar flowers.

Scenery: tray covered in silver foil. Moat blue water icing, grass coconut (put dessicated coconut into plastic bag, add small drop food colouring and shake to cover it. Stick down with small amount green water icing.) Monster, princess and ducks all moulded out of fondant icing. Candles stuck in dolly mix and stuck to grass with icing.
