Coolest Princess Castle Cake

My 3 year old wanted a princess castle cake for her birthday. I got so many ideas from this site and then made my own! It was very large. Two layers of (4) 8×11 pans on the bottom (swirled chocolate, strawberry, vanilla cake batter) and (2) round cakes on the top. There was supposed to be a smaller square cake on top of the round cake, but it didn’t stay together very well. I used a filling of whip cream and rasberry preserves (no seeds) and then a regular buttercream frosting (colored purple) for the outside. I used the Viva paper towel method to make it smooth and then used a stencil to make it look like blocks (hard to see in the picture).

For the turrets I used 2 standard ice cream cones for the bottom of the turret (one upside down on top of another) then frosted then rolled in sugar crystals. For the top of the turret I took sugar cones and dipped them in melted vanilla bark that I colored pink. This was SO MUCH easier than frosting and sugar crystalling the other cones.

I made the doors and windows out of marshmallow fondant that I colored purple. Fondant and I don’t get along too well. I may just buy some fondant next time. The little “lakes” outside the castle are colored fondant and the “rocks” around the lakes are special M&M’s I found at the store. I ordered the princesses online at the Disney store. I piped around the whole castle and windows.

I ran out of time, as there should have been flags on top of each turret and other details are missing, but she absolutely LOVED the cake!
