My grandaughter wanted a Princess Castle Cake Idea for her third birthday. I had no idea how to pull that one off! I started by gathering ideas from websites and books, then winged it along the way. I baked 3 10inch round dark chocolate cakes and split each into 2 layers so that I ended up with 6 separate layers.
I used white buttercream frosting between each layer , on the sides and on the top. Then I took cake style icecream cones turned them upside down and stacked them to varying heights. I topped these off with the pointed sugar cones to finish off each turret and added toothpicks with velum on the tops for the flags. Then I used pillow mints as a top border.
I used pink sugar waffle cookies for the windows and doors and heart shaped candies for accents. I piped pink frosting using the star tip to cover the cones and to add accent borders.Just a dab of icing secured the candy hearts to the door and windows.I made this cake over the course of several days placing it in the refrigerator uncovered when not working on it. I was shocked at how moist it was.
When my husband and I brought the cake into her house, her mouth flew wide open and her eyes got as big as half dollars. It was worth every minute I spent working on this cake just to see her expression.
