I made this Homemade Rapunzel Birthday Cake Design for my 7 year old daughter’s birthday. She fell in love with Rapunzel (before we even watched Tangled) and “demanded” I make her a Rapunzel cake.
I made the batter and the filling from scratch; both were vanilla. I baked a tall 9″ round cake, a 6″ round cake and used a large chick peas washed can to bake the bottom of the tower. I filled the bottom layer and the bottom of the tower with vanilla custard.
The bottom is decorated with green homemade buttercream too imitate grass. I used Smarties to make a stone walk to the tower. I made a small hole on one side of the tower, big enough to fit the gum paste Rapunzel I made ahead. I then dirty iced the tower and wrapped it in gray marshmallow fondant.
With a fine brush I drew stone bricks on the tower to imitate a granite castle wall. I used a big ice cream cone to make the pinnacle of the tower. I iced it with buttercream and then rolled it in purple sugar crystals. Then I piped the vines and leaves with buttercream all through the tower and pinnacle.
I glued marshmallows with buttcream all around the top of the tower.I placed dozens of tiny little gum paste rolled roses all through the tower and pinnacle.
Finally, I glued Rapunzel to the hole on the tower and with a tip with multiple holes, I piped her long, long, long tresses (all around the cake and back).
My daughter and her little friends, as well as our family, really loved this one.
