I made this “Spaghetti & Meatballs” cake for my future-mother-in-law for her birthday last year. Since my fiance is Sicilian, Spaghetti & Meatballs were a staple in his home growing up. When I saw this cake on a blog that I frequently read, I thought it would be so fun and appropriate to make this cake for his mother for her birthday! I used a 9 inch round chocolate cake, frosted it and piped more frosting to look like spaghetti. I made the frosting from an old recipe that my mother used, but added a few drops of yellow food coloring and a teaspoon of cocoa to make it look like pasta. I then used chocolate truffle balls, dipped in blended cherry pie filling to make the meatballs (as you can see, one almost got away!).
This cake turned out so perfect that when I brought it to my future-mother-in-law’s for her birthday dinner, no one wanted to eat it because they were afraid they’d ruin the masterpiece! We still have no idea how it ended up tasting because this cake still sits in the freezer at my fiance’s parents’ home a year later, and whenever someone new comes over his mother takes it out and shows it off!
This cake has become famous in our Sicilian family and even our relatives in Sicily know about it and are expecting one when they come to visit next. Needless to say, everyone in our family who lives in the U.S. now wants a Spaghetti Cake for their birthday as well!
