I created this Homemade Strawberry Shortcake Birthday Cake for my granddaughter’s fourth birthday party. It was a huge hit. I have never done this professionally and haven’t decorated a cake for years.
I found several examples of cool cakes online, mostly using fondant. I had decided against using fondant since children may not like the taste. I used buttercream icing, both premixed Wilton icing and my own recipe. I used chocolate, strawberry, and vanilla cake I made from scratch, using ten-inch, eight-inch, and four-inch round pans. I tried using cake release and hated it, I used the Baker’s Joy flour and baking spray mix.
I used the Wilton plastic dowel rods cut to size to stabilize the tiers, and cardboard circles in between the tiers. The top decoration is a small Strawberry Shortcake doll I had actually purchased as a present, a friend suggested I use it on the top; I curled blue ribbon as an additional decoration.
This was a lot of fun to create and now my other granddaughter wants me to make her a cake.
