I made this homemade Super Mario cake for my son’s 5th birthday. I used a 9×13 cake pan and iced the cake with butter cream icing.
This was my first time working with fondant. I used a recipe that had corn syrup in it and now that I’ve used marshmallow fondant a few times I wouldn’t use the first fondant recipe again. Looking back, my fondant could have used more icing sugar as it was too sticky and soft. Despite how difficult the fondant was to work with I was eventually able to make a cake I was happy with. My son and his friends loved it, so it was worth the hassle.
